There's always a first time for a ……. Cheesecake!



It’s been very difficult to choose the base of my recipe because there are so many out there and all with different measures. So I decided to take one and just change very little things to ensure i do my first test. This is one is maybe a bit too sweet actually but quite good.

Lemon cake with almonds bottom

What do you need?

  • 4 eggs
  • 200g of butter
  • 250g of flour
  • 200g of sugar
  • 1 lemon
  • 1 lemon yogurt
  • 15 almonds that you’ll crush
  • Vanilla, cinnamon

Mix in your Kitchenaid the eggs and sugar, add the butter, vanilla, yogurt and cinnamon. Add the juice from the fresh lemon and the flour. Mix well.

Spread into your baking form and put in the oven. Put on top the crushed almonds. Cook for 60mn at 180°



Speculoos Tiramisu – simple way

What do you need?

  • 1 mascarpone (250g)
  • 3 big eggs
  • 60g of brown sugar
  • Vanilla (sugar or essence)
  • 1 pack of speculos biscuits (i buy the Lotus one)

Separate the white from the yolk. Mix the yolk with the brown sugar and vanilla. Once the texture is smooth mix the mascarpone and reserve.

Mix the white eggs with a pinch of salt until firm. Then add the white eggs little after little in the mascarpone preparation and reserve in the fridge for 1hr.

Start reducing the speculos into pieces/power. You can either smashed them all, or keep half to put at the bottom. I prefer to have it all fully mixed, but many people just put the entire biscuit in the bottom with a bit of coffee or amaretto. I don’t like coffee so i don’t put anything. I like that the speculos is a bit crunchy still when i eat it.

In a recipient, poor half of the speculos, then add the mascarpone mixture and finish by topping with the rest of the speculos.

Keep in the fridge for 1hr and serve when ready.

it’s also ver nice to prepare individual small portion in glass.

My macarons from Mars

I still have to practice more on the shape lol. As for the taste, it was delicious. In did the French meringue but next time I’ll use the Italian way. The feeling was very simple: Philadelphia cheese, vanilla sugar and a bit of fresh lemon juice.

So I got myself a good reference book for the next time from Christophe Felder because with such a shape I really was in a bad bad day 🙂

I always like to bake a brownie as it’s very strong in chocolate and usually it helps you be happy. This is how i do it:

180g of butter
250g of chocolate Nestle Dessert
150g of sugar
4 eggs
1 vanilla sugar bag
1 tea spoon of Vanilla
1 spoon of mashed almonds
2 spoon of flour

Melt the butter and chocolate in ‘bain marie’ and be careful to not cook the chocolate otherwise it will not look nice and make some pieces.

Meanwhile, beat eggs and sugar.

Mix the chocolate sauce and sugar eggs, add the vanilla, vanilla sugar, almonds and flower.

Cook in the over at 180° for about 20mn. When you put your knife inside, it will look not entirely cooked but it’s fine like this, don’t over cook it.
